Dinner pairings are not so common, but they are more common when pairing wines and dishes. In this case, the SkyRoom is leading the way by pairing multiple cognacs in a four course menu. The cognac selection will include Comandon VS and VSOP, and more interestingly a 2003 vintage single cask cognac from the Petite Champagne Appellation Controlee. This is a rare combination since there are not many vintages cognac and so many single cask cognac available that we know.
