COURSE I
French Cheese Plate ~ Saint-Angel Triple-Creme, Société Roquefort Blue, Focaccia Bread paired with Comandon Cognac V.S

COURSE II
Roasted Duck breast ~ Chanterelle Mushrooms, Garlic, Shallots, Pine Nuts, Fennel pomegranate, cognac
paired with Comandon Cognac X.O Vintage 2003 Single Cask from Petite Champagne

COURSE III
Filet Mignon with Seared Foie Gras ~ Sunflower Chokes, Chanterelle & Cognac Mushroom Sauce
paired with Comandon Cognac V.S.O.P

COURSE IV
Juan Carlos’ Bread Pudding ~ Blueberries, Pecans, Crème Anglaise, Caramel
paired with Monteru Merlot Single Grape Brandy

Dinner pairings are not so common, but they are more common when pairing wines and dishes. In this case, the SkyRoom is leading the way by pairing multiple cognacs in a four course menu. The cognac selection will include Comandon VS and VSOP, and more interestingly a 2003 vintage single cask cognac from the Petite Champagne Appellation Controlee. This is a rare combination since there are not many vintages cognac and so many single cask cognac available that we know.
